California-Style Burrito
Description:
This style of burrito has its origins in southern California, and is slightly different than the more popular and mainstream mission burrito that is filled with rice and beans. Typical fillings for a Cali burrito include carne asada, guacamole, pico de gallo, cheese and most importantly, french fries.
Ingredients:
Sour cream
Monterrey Jack or Cheddar cheese
4 large potatoes, peeled and cut into batons
2 cups vegetable or peanut oil (480 ml)
Carne asada, cut into cubes (see recipe)
1 Large flour tortilla (see recipe)
Guacamole
2 ripe avocados
½ small onion, diced
½ cup cilantro leaves, roughly chopped
Juice of 1 lime
Salt
Preparation:
To make french fries, heat the oil in a pot over medium high heat. Once heated, add the potatoes and fry until potatoes are softened and slightly golden. Remove and drain on paper towels. Then, increase heat to high and fry a second time until the fries are well browned. Drain on paper towels and immediately season generously with salt.
To assemble burrito, heat the tortilla in a pan or in the microwave for 30 seconds. For best results rolling the burrito, use a sheet of aluminum foil.In the middle of the tortilla, add a handful of carne asada, french fries and cheese, followed by a spoonful of guacamole and a dollop of sour cream. Tuck in the sides of the burrito, then roll into a tight log. Place the rolled burrito on a hot pan and toast for 1-2 minutes on each side.

You can use other types of meat for this burrito.
