Texas BBQ Baked Beans

Description:

Barbecue baked beans are popular in regional varieties in the US. This dish is similar to the standard BBQ baked beans recipe that can be found almost everywhere in America, however this version is more unique to Texas. This version of barbecue beans has a distinct Mexican influence from the use of pinto beans, peppers and Mexican beer, and is a great example of the fusion cuisine that can be found in the Southwest United States.

Ingredients:

  • 1 can pinto beans

  • 2 strips of bacon, cut into lardons

  • 1/2 medium green bell pepper, diced

  • 1/2 medium onion, diced

  • 1 clove garlic, minced

  • 1 cup dark beer (240 ml)

  • 1/4 cup (60 g) BBQ sauce (see recipe)

  • 1 tbsp brown sugar (15 g)

  • 1/2 tsp worcestershire sauce (3 ml)

  • 1 tsp chili powder (6 g)

  • Salt & pepper

Preparation:

Add the bacon to a pot and heat over medium heat. Cook until the fat is rendered out of the bacon, about 5-6 minutes. Then add the onion, pepper and garlic, and cook for another 5 minutes until softened. Increase heat to medium high and add the beer. Cook for 1 minute to evaporate the alcohol. Then add the beans, BBQ sauce, brown sugar, worcestershire sauce and chili powder. Cook for 10 minutes then season to taste with salt & pepper.
