Refried Beans
Description:
This dish originates from Mexico and is used extensively in Southwest cuisine. It is most common to prepare using pinto beans and black beans, although other bean varieties can be used as well.
Ingredients:
2 cans pinto beans
1 tbsp lard or bacon fat (15 ml)
½ medium onion, chopped
1 clove garlic, minced
1/2 tsp cumin (3 g)
Salt & pepper
Preparation:
Heat a pan over medium heat and add the bacon fat, onion and garlic. Cook for 5 minutes or until softened. Add the cumin,and cook for 30 seconds. Add the beans and mash up with a fork. Optionally, you can add half of the bean mixture whole, and blend the other half of the can with a splash of water, then add that to the pan. Cook for around 10 minutes over medium-low heat until beans have thickened. Season to taste with salt & pepper.
