Breaded Trout
Description:
Wild game is a key component of the cuisine of the mountain states region. Trout is commonly fished in mountain streams in this area, and below is a simple preparation for this fish.
Ingredients:
1 rainbow trout filet
1/2 cup bread crumbs (75 g)
1 tsp lemon zest (6 g)
1/2 cup flour (60 g)
1 egg, beaten
Salt & pepper
2 tbsp butter (28 g)
1 tbsp vegetable oil (15 ml)
Lemon wedges
Mashed Potatoes
2 medium potatoes, peeled and cut into cubes
2 tbsp butter (28 g)
1/4 cup half & half (60 ml)
Salt
Spinach
1 large handful fresh spinach
1 clove garlic, minced
1 tsp olive oil ( 5 ml)
Salt & pepper
Preparation:
To make mashed potatoes, add the potatoes to a pot of cold water and heat over high heat. Boil potatoes until they are you can poke a knife through them with no resistance. Add the potatoes back to a pot and add the butter and cream. Mash with a fork or potato masher and season to taste with salt.
To make spinach, add the oil and garlic to a pan over medium heat. Once the garlic starts to sizzle, add the spinach and cook for 1 minute, until just barely wilted. Season to taste with salt.
To make fish, season both sides with salt & pepper.
Notes:
Some common variations to this dish include the addition of parmesan cheese to the fish crust or the use of ground nuts or crackers instead of bread crumbs.
