Huli Huli Chicken

Description:

Huli huli chicken originated in Hawaii in 1955 when it was invented by businessman Ernest Morgado. The marinade itself is similar to teriyaki sauce, sweetened with pineapple juice which is abundant to the Hawaiian islands. This dish is very popular to this day and can be found in establishments throughout the state.

Ingredients:

(Serves 2)

  • 8 boneless, chicken thighs

  • 1 cup pineapple juice (240 ml)

  • 1/2 cup soy sauce (120 ml)

  • 1/2 cup ketchup (60 g)

  • 1/2 cup brown sugar (60 g)

  • 3 cloves garlic, smashed

  • 1 thumb-size piece of ginger, halved and smashed

  • 2 tbsp apple cider vinegar (30 ml)

Preparation:

Combine chicken with marinade ingredients in a bag. Leave to marinade in the refrigerator for 4-24 hours.

Heat a grill pan or grill over medium high heat. Make sure to adjust the heat or move the chicken to a cool spot on the grill because this marinade burns easily.

Notes:

  • While it is not traditional, you could cook this recipe in a frying pan over high heat with some vegetable oil.
