Pancakes

Description:

 Pancakes, also known as “flapjacks” by some in the American south, are one of the most iconic and popular breakfast foods in America. The origins of this food can be traced back to the 1700’s, when Dutch settlers brought their version of pancakes to North America. Pancakes are always topped with maple syrup and butter, and are often accompanied by bacon or breakfast sausage on the side.

Ingredients:

Makes 3-4 Pancakes)

·      1/2 cup flour (60 g)

·      1/2 tsp baking powder (3 g)

·      1 tsp sugar (6 g)

·      1/4 tsp salt (2 g)

·      1 egg

·      1 cup buttermilk (240 ml)

·      Maple syrup for serving

·      Salted butter, for serving

 

Preparation:

Mix the flour, sugar, salt and baking powder in a small bowl. In a separate bowl, whisk the sour cream, milk and egg until smooth. Using a spoon, mix the milk and flour mixture together until just combined but still lumpy. Do not over mix - this batter should be relatively thick and lumpy. 

In a cast iron skillet or griddle, heat the butter over medium high heat spread around pan with a spatula. Spoon your desired amount of pancake batter and let cook for 1-2 minutes. When bubbles start forming on the top, they are ready to flip. Cook for another 2 minutes after flipping. Remove from pan and top with additional butter and the syrup. Enjoy immediately. 

 

Notes:

  • Blueberry and chocolate chip pancakes are two popular variations of pancakes - you can make these by mixing either of these into the batter prior to spooning the pancakes on to the pan.

  • Buttermilk can be substituted with a mixture of the following:

    • 1/2 cup sour cream (60 g)

    • 1/2 cup milk (120 ml)
